Skinny Chicken & Broccoli Alfredo

How to Make Skinny Chicken & Broccoli Alfredo!



Don't be frightened. It IS healthy, but it's also delicious.
Yes, that is a real thing. Trust me. 
Or try it out yourself and thank me later.
This is like the healthier version of Fettuccine Alfredo, but it's just as good, honey.

Ingredients

salt & pepper
at least 2 boneless chicken breasts
broccoli 
rotoni
extra virgin olive oil
minced garlic or garlic powder
flour
chicken broth
milk of your choice (I used almond milk)
 plain greek yogurt or plain non-fat yogurt
grated parmesan cheese


Exact Measurements:

2 boneless chicken breasts seasoned with salt & pepper then chopped into bitable pieces
2 cups of cooked broccoli
2 tablespoons of extra virgin olive oil
2 tablespoons of garlic or garlic powder
2 tablespoons of flour
1 cup of chicken broth
1/4 cup of milk
1/4 of plain greek yogurt
3/4 cup of grated parmesan cheese


Directions

Start by cooking the box of Rotini in salted, boiling water. Try to aim to have 1 tablespoon of salt.

Next, heat up a skillet and add the cup of chicken broth and slowly add in 1/4 cup of milk. 
After that, you can add your 1/4 cup of plain greek yogurt/non-fat yogurt with salt and pepper. 
Finally, add in the parmesan cheese, garlic powder, and chopped chicken breasts.



While that is being cooked, I placed the broccoli in a separate pan and began steaming/cooking it. 


While broccoli is being made, you can finish your alfredo by putting the alfredo sauce in it and place it into your serving dish and area
Once the broccoli is finished, drain it, and then stir into the pasta with the 
chicken and any extra parmesan you may want to add.

And voila!

Chocolate Chip Cheesecake Bars

Basically, I'm not a fan of junk food or chocolate, in general. However, I do love chocolate chip cookies and brownies. I started thinking to myself, wouldn't it be nice if the two were combined. 
And what do you know? I have a recipe where I can combine the two. 
Let's just take a moment and appreciate the wonderfulness of the concept of a "Chocolate Chip Cheesecake Brownie". 

It's absolutely delightful. 
I mean, chocolate chip and cheesecake? It makes my mouth water. 
All of my friends swear that this is the best "snack" that they've tasted. It's one of the only recipes that I know by heart. It's quick and simple. It would make a perfect dessert for any party. 


Ingredients that you'll need



1 large egg
2 packages of 16oz chocolate chip cookie dough
2 packages of 8oz cream cheese
Vanilla Extract
Granulated Sugar



Appliances that you'll need


1 mixing bowl
1 baking pan
1 mixing cup
1 tablespoon
1 mixer

Directions
You want to start by pre-heating your oven at 350 degrees.
Use your first package of cookie dough to cover the ungreased baking pan, forming a crust.



My tip is to use your hands, as it is the easiest. You could also use the back side of spoon to flatten it out in the pan. Once you have the pan covered, you need to place it in the oven and bake for 15 minutes. 


While that is baking, you can start mixing your vanilla extract, egg, sugar, and cream cheese.
You'll need 1/4 granulated sugar, and 1 tablespoon of vanilla extract.  You're going to mix well enough until it is at thick paste. 




Take the crust out of the oven and spread the cream cheese mixture over it. It will blend with the crust and that is perfectly fine! 




Once the cream cheese mixture is over the crust, you're going to crumble the other package of cookie dough on top of the cream cheese mixture. Make sure you have no sparse areas. 


It should look something like this when it is finished.

It takes little time and is fairly easy. I've just made some last night, this is about the 20th time that I've made them and it gets easier every time. I hope you enjoy them :)

note: you don't have to use chocolate chip cookie dough, you can use what you like!

I've decided to post more on my blog. Yes, finally!
Does that mean I will be blogging everyday of the new year? 
Well, absolutely not. I'll be blogging when I do something interesting and when I find the time in my hectic college schedule. 
Which, more than likely, will be on Tuesdays and Thursdays. Those are my days I have off. 
It will also probably be on the weekends, too. 
Like I said before, it won't be every Tuesday & Thursday.


More beauty & fashion posts OR more blogs in general? 
What's your opinion on this? Do you think I should blog more about everything or more towards my interests which are food, fashion, beauty, and travel? Please, leave a comment of a suggestion. I would love to hear your feedback. As I am brand new to this, it would be highly important for me to know what ANY reader would want to see. 

Lastly, I have discovered a new camera & I made it mine! 

So, basically, the camera is badass. 
It's from Sony. My very first "serious" camera that isn't from Canon. 
I still have my Canon Rebel t3, but it's not that portable. I would much rather have my new one to use. It is the Sony Alpha a5000. I've heard nothing but wonderful reviews. It has wonderful abilities and settings. With that said, it has the capability to connect to wifi. Basically, that means I'll be able to upload to my Instagram or upload to any social network with the touch of a button. 
Yes, technology still amazes me. It's freakin' unbelievable. 
If you aren't following me on my social networks, I'll leave the link at the top & bottom of the page. With this new camera, I'll be able to give amazing quality. Hopefully, a substantial amount of quantity, too. I am waiting for the camera to come USPS. It's expected to be here within in the next week.  
It's going to be a whole new ballgame. Is that two words or one? I'm just going to go with one.
